Cabernet Sauvignon
Greatest French noble variety, the Cabernet-Sauvignon is found either as a varietal or as a blend.
As a varietal the wine is powerful and ages very long, especially if is is kept
in oak. As a blend, together with plants like ,
and or brings refinement, smoothness,
roundedness, and allows for an earlier drinkable wine.
Its flexible shoot makes it suitable for any trellising system.
Under warm climates, this variety, which undoubtedly produces wine ageing better than
many others, is mostly used within blends, sometimes up to 75%.
Sine 1980, the plant has widely been grown.
In 1998, it was the 3rd mostly used grafted vine.
It is recommended in the south French provinces.
In Languedoc-Roussilon it is now being used more often by wine makers than ever before.
Aromas and flavours of Cabernet-Sauvignon are many and also quite complex.
Blackcurrent and cedar wood are the two main references given by people.
We may also feel green capsicum, cherry, elder tree berry, and redcurrent.
As it ages its taste evolves towards a tame wine, leather, and undergrowth.
